Extracting this honey is very problematic for the beekeeper, due to late harvests and the high moisture content at the source. The honey tends to crystallise almost immediately, sometimes even in the combs, making extraction and moisture correction difficult. This honey, with a predominance of glucose (80 %) over fructose (6 %), is so rich that even bees find it difficult to use it as nutrition. Flowering takes place between September and October, and the very rapid crystallisation forms a compact dark yellow mass with shades tending to grey. The honey has a medium-intense smell and taste, persistent in the mouth, and very sweet. Perfect to spread on bread, to sweeten herbal teas and infusions, or as a special ingredient in sweet recipes.
